SITUATION:
I'm new to Matlab and I'm trying to find a tutorial on Fourier analysis. I've searched youtube and the documentation site and cannot find a tutorial that will explain what I want. Most of these tutorials are difficult to understand and don't explain what I specifically want to do.
I just finished my Calculus 2 course. In Fourier series we found the definition of the sin and/or cos terms that built the model of the Fourier definition. We could substitute values of K into the model to take the definition out to as many terms as we wanted to improve the accuracy in modeling a signal with cosine and/or sine waves.
My professor used another computational source other than MATLAb to do this quickly. I believe it was mathematica. I was hoping I could do the same in MATLAB.
Can anyone give me a source or point me in the right direction that would help me understand how to enter piecewise functions and find these terms that build up the Fourier definition.

I can point you in a very broad direction since you haven't defined what you want help with.
What you are looking for can be found in the Symbolic Math Toolbox:
You can either work inside of MATLAB or work in MuPAD which is a graphical front for symbolic manipulation end much like mathematica:
