My Macbook is from 2012 and is running on macOS Catalina (10.15.7). Does the newest MATLAB version run on this system?

The requirements are written here: https://www.mathworks.com/support/requirements/matlab-system-requirements.html. Yes, it runs on macOS Catalina 10.15.7; you may need to check if other hardware requirements are fulfilled.
