How much would it cost to renew a software maintenance service for 5 classrooms and 2 faculty copies of MatLab? Thank you!

My college purchases 5 students and 2 faculty copies of MatLab a few years ago. How much would it cost to renew a software maintenance service?

You need to contact your Mathworks sales representative about that. Very few of the volunteers who answer questions here have access to the pricing or licensing databases.
Note that student licenses are not transferable: they are for use by individual students.
Historically, software maintenance service was not available on student licenses, but that changed somewhere around R2017b-ish (I do not remember the exact release for certain). Even if you happened to have purchased after that point, if the service has not been paid for a couple of years, then possibly it would be more cost effective to just re-purchase the student licenses.
It is possible that what you bought was a couple of Designated Computer licenses, which permit specific computers to be used by (any) student provided they are at the console of the computer. Those kinds of licenses would be considered Academic licenses rather than Student licenses.
With the counts you mention, it is not plausible that your licenses are Total Academic Headcount licences, which are Academic license class but can be used by students.
If you are not up to date on software maintenance then you will probably be asked to pay for software maintance for the years you missed. As an approximation, each year of service payment is about 20% of the purchase price.
I have no idea what discounts you might be entitled to, or what consortiums you might be members of that might make the rate less expensive; also the prices are somewhat regional. So I cannot give you any meaningful price estimate myself; you need to talk to Sales.
