How to read digital numbers on LED displays taken as pictures (.bmp)

What I have is a bunch of similar images in .bmp format that display several variables (pressures and temperatures) like the one I attached.

What I need is to read those numbers in Matlab in order to save them and make plots. Does someone know if there are ways to do this?
