How to get lat and lon data to create custom choropleth map

I am working on creating a choropleth map of analytical requests by country to my lab. I have found in the mapping toolbox that I can do something like this however I need latitude and longitude data for each countries/states boarder. Can someone let me know where I would go to get this type of data?

I went to natural earth to download what they have but I can't make heads or tails of their data.
