I am taking an online Linear Algebra course from University of Texas at Austin through edX. What add-ons or toolboxes should I purchase with my student version of MATLAB?

What toolboxes or add-ons should I purchase along with the basic MATLAB software?

Why do you need anything additional? MATLAB is designed to do linear algebra. It does that well.
If you will do something with MATLAB afterwards, then it might help if you think about what YOU are interested in. If all you care about is passing that specific course, then you won't use MATLAB afterwards anyway. Sorry, but you won't, IF that is your only goal. And since you have said nothing that indicates your goal is anything more, how can we know?
So, if you care about other topics, then look to a toolbox that will help you further your studies. Think about what other classes you will be taking in the future. Again, we don't know your plans or your interests.

I'd think that if any toolboxes beyond base MATLAB were needed, they'd tell you. Anyway, in my opinion, I think that the 3 you might most likely need would be the Image Processing, Statistics and Machine Learning, and Signal Processing Toolboxes, but I'd bet that they probably won't be absolutely necessary for an intro to linear algebra class. You should ask the university online education administrator.
You might want to look at the "Refine by Product" listbox on the left hand side of the page when you are looking at all the questions, to give you some rough idea of the "popularity" of the various toolboxes.

Basic MATLAB is all you need for linear algebra, but it can be useful to use the symbolic toolbox for linear algebra.
