This question is easy to answer because you do not have to do anything: a FASTA file is a text file already: "FASTA format is a text-based format". Every example that I found online was a text file.
Try opening your file using Notepad++.

It is already a text file.
The file extension (e.g. .txt) has nothing to do with how a file is encoded. A FASTA file is encoded as a text file. You can change the file extension from .fasta to .txt if this makes you happy, but this does not change its encoding. Your FASTA file is already a text file.
If you really want to do something in MATLAB, then try this:
copyfile('yourfile.fasta','yourfile.txt')
