Matlab export as EPS messes with font

When I try to export my figure as an 'eps' file and then insert the file into MS Word, the text on the titles/legend appears larger, bolded, and just generally very ugly and pixelated. How do I sort this?

Word displays the EPS on the screen by drawing the embedded preview, which is a low resolution TIFF image. Printed on paper or in a PDF, the high resolution vector graphics are used.

If you really need to improve the screen view in Word, increase the resolution of the preview TIFF. See the "-r" flag of print.
