Change Vertices to interpolate with shading interp in pcolor plot

When I use shading interp in pcolor plot, the interpolation is between 4 vertices. If one of them is Nan, this point is not coloreated and I lose information. Can I change, if there're a NaN, the number of vertices for the interpolation, or if a point with colour, changes to Nan, leaves with colour?
