I do not have Simscape (or Simscape Fluids), so I am not posting this as an answer. Searching on ‘coolprop’ brings up CoolProp to the Rescue, and searching on ‘refrigirant mixture’ brings up these results.

Looks like you can use the MATLAB wrapper for Coolprop to define a mixture and query the properties, like below:
py.CoolProp.CoolProp.apply_simple_mixing_rule('R1234yf','R32','linear')
py.CoolProp.CoolProp.PropsSI('Dmass','T',300,'P',101325,'R1234yf[0.311]&R32[0.689]')

Please, this message error appear:
Error using CoolProp/CoolProp.apply_simple_mixing_rule
Python Error: RuntimeError: CAS pair(75-10-5,754-12-1) already in binary interaction map; considering
enabling configuration key OVERWRITE_BINARY_INTERACTION
Error in CoolProp/CoolProp.apply_simple_mixing_rule (line 317)

I think that's because the mixture was defined once already in CoolProp. I got the same message if I try to run the apply_simple_mixing_rule code twice. You can comment out that line and try again, or restart MATLAB :)
