MATLAB variable names:
  • start with an upper case or lower case English alphabet character -- ABCDEFGHIJKLMNOPQRSTUVWXYZabcdefghijklmnopqrstuvwxyz
  • After that the characters may include upper case or lower case English alphabet character, or the arabic numerals 0123456789 or the underscore character
  • must be at most 63 characters long
It is not possible in MATLAB to use σ as part of the name of a MATLAB variable.
That said:
If you are using Livescript and you have a Symbolic Toolbox variable name that is one of the English names of the Greek alphabet, with an upper or lower case initial letter, or in some cases with "var" proceeding the name of the Greek character, then when you display a symbolic expression that has the variable in output, then Livescript will render the character as a graphic
