I would like to modify the font type of all text objects (e.g. title, x label, etc.) inside open figures.

To modify the font type, and eventually other text properties, of all open figures you can follow this procedure:
1) Obtain all figure handles using the FINDALL function.
2) Obtain all text objects handles using the FINDALL function.
3) Modify selected properties through the SET function.
You can find an example of this procedure in the following code:
fh = findall(0,'Type','Figure');
txt_obj = findall(fh,'Type','text');
set(txt_obj,'FontName','Calibri','FontSize',15);
