Visualizing slices of volumes generated from points in 3D space

I use MATLAB to reconstruct a certain region of the brain in 3D with a Delaunay Triangulation. That region of the brain also has sub-nuclei that I also reconstruct and color-code for clarity.
I'd like to be able to view axial (Z is constant), sagittal (X is constant), and coronal (Y is constant) slices of this color-coded 3D reconstruction. How may I do this? Simply viewing a scatter plot doesn't work, because the points don't fall on a regular grid.
