Visualizing slices of volumes generated from points in 3D space

I use MATLAB to reconstruct a certain region of the brain in 3D with a Delaunay Triangulation. That region of the brain also has sub-nuclei that I also reconstruct and color-code for clarity.
I'd like to be able to view axial (Z is constant), sagittal (X is constant), and coronal (Y is constant) slices of this color-coded 3D reconstruction. How may I do this? Simply viewing a scatter plot doesn't work, because the points don't fall on a regular grid.

You'll first need to grid the data, e.g. using scatteredInterpolant(). Then to view, perhaps use one of these FEX submissions
There are also many other 3D viewers there that you could browse.
