Interest point detection using STIP and then make their database in MATLAB?

Hello, i am making my final year project i.e. Sign Language Recognition.I am using webcam to take the videos of the gestures, get their interest points using STIP. i want to know how to create the database of those interest points in MATLAB and how to apply K-Means clusters on them to minimize the data sets. Regards
