How to perform "background subtraction" for an image in matlab ?

I have a set of images which I am currently using for feature extraction such as color histogram and so. But since a major portion of the images is covered by a constant background, I want to remove this background such that I have the image with just the object in the middle. Please advise what could be done to do so.
