Displaying data points from a set of pressure transducers in a cylindrical chamber

Hello, I am performing some acoustic experiments and have a number of pressure transducers at different azimuth locations around a cylinder (in the same axial plane and at the same radius). I am looking to plot the different pressure values onto a representative circle and if possible interpolate the values in between the different transducers. Eventually, i'd like to create a similar plot using xcorr to show cross cohearance. I'm relatively new to Matlab and don't have any idea how to even set up the problem in Matlab or the signal processing toolbox. Any help or direction would be appreciated! Thanks!
