How to creat a graph for Turbine Characteristics Curves

Hi, I am struggling to plot a characteristic turbine graph, as I am unsure how to plot 3 variables on the graph. There is a picture of what the graph should ideally look like in the attachments.
If it is possible, could you give me some guidance of how to plot this graph?
