Fuzzy variables as inputs to Fuzzy Logic Inference System

Hi,
Typically, we have crisp numbers as inputs to a FIS. I would like to know if linguistic values can be used instead? For instance, instead of having pressure = 67 as an input, can it be substituted with pressure = “high”, where “high” is a defined membership function over input domain?
Another question, Fuzzy Logic Toolbox has a really nice GUI, but it becomes impractical when you have tens of variables. Can Fuzzy Logic Toolbox handle hundreds of variables? If so, I could use .fis file and copy/paste to create many variables and rules.
